Almond, Sunflower Seeds & Dried Apricot Granola Recipe

Ingredients
• 400 g old-fashioned rolled oats
• 200 g raw nuts and/or seeds (suggested: 100 g almonds and 100 g sunflower seeds)
• 5 g fine-grain sea salt (if you’re using standard table salt, scale back to 3 g)
• 1 g ground cinnamon (approximately ½ teaspoon)
• 120 ml melted coconut oil or olive oil
• 120 ml maple syrup or honey
• 100 g dried apricots, chopped
Instructions
1. Preheat the oven to 180°C and line a large, rimmed baking sheet with parchment paper.
2. In a large mixing bowl, combine the oats, almonds, sunflower seeds, salt, and cinnamon. Stir to blend.
3. Pour in the oil and maple syrup (or honey). Mix well until every oat and nut is lightly coated. Spread the granola evenly on your prepared baking sheet.
4. Bake until lightly golden, about 20 to 25 minutes, stirring halfway. For extra clumpy granola, press the stirred mixture down with a spatula to create a more even layer.
5. Let the granola cool completely, undisturbed (at least 45 minutes). Once cooled, add the dried apricots. Break the granola into pieces with your hands for large chunks, or stir with a spoon for a less clumpy texture.
6. Store the granola in an airtight container at room temperature for 1 to 2 weeks.
